Healing Soup
[ingredients] 1 tsp sesame oil1 tsp fresh ginger, minced or grated
1 clove garlic
½ cup scallions or green onion all parts used
3 Cups chopped Bok Choy
5 Cups chicken or vegetable broth
1 Cup water
1 Tbl. wheat free Tamari sauce, organic soy sauce, or Braggs Aminos
1 piece sea vegetable: Kombu or wakame
Top Soup with fresh herbs and spices
Fresh chopped cilantro
1/2 tsp fresh chili pepper or to taste
1 garlic cloves minced
Diced avocado
Optional ingredients: snow peas, shredded chicken, halved cherry tomatoes *1 TBL miso, water chestnuts, cooked brown rice, brown rice noodles, soba or udon broken into pieces.
[/ingredients][preperation] Heat your pot on medium. Add sesame oil, ginger, garlic, scallions, bok choy, and 3 Tbl of broth.
Cook 3 minutes, stirring frequently until onion is tender. Add remaining broth, water, and tamari or soy sauce. Bring soup to a boil. Add noodles, if using, and reduce heat, and cook covered for 8 minutes or until noodles are tender.
Serve warm.
Top with fresh minced cilantro, chili peppers and garlic.* If adding miso: take 1/3 C hot soup in a separate bowl and add miso. Blend well. Add to finished soup. Do not boil.
