Forget The Freeway Flapjacks (or Why no Walk? Waffles)

Mix the following dry ingredients together:

  • 1 ¼  Cups Pamela’s Gluten Free pancake baking mix
  • ¼ C fresh ground flax seeds; grind in a coffee mill (chia seeds are great, too)
  • ¼ C coconut flour

Mix the following wet ingredients together:

  • 2 eggs
  • 1 tsp organic vanilla flavoring
  • 1 Cup Hazelnut Amazki, hempseed milk, or buttermilk
  • 1 Cup Arrowhead sparkling berry flavored water
  • 1 heaping Tbl. honey or Agave
  • 2 Tbl. pure maple syrup

Add dry ingredients to wet and blend well.

Cook on medium heat, using coconut oil to prevent sticking and add a hint of flavor! Make sure pan is hot, then add pancake mixture to heated pan and when brown, flip.

Special notes:

  • If batter is too thick, add a little more sparkling water
  • For flavored pancakes/waffles, add mashed ripe bananas, chocolate chips, pecans, or walnuts
  • Serve topped with a little butter, mixed berries and organic Maple Syrup
