Cold Season Tea
Makes 2 large batches
[ingredients] 4-6 lemons washed and quartered
1-2 lemon grass stalks washed and cut in 2-3” pieces. Thicker pieces halved (Available at Farmers Markets)
3 cinnamon sticks crushed
1-2” piece fresh ginger sliced in 6 pieces
Raw sage honey to taste (Available at Farmers Markets)
8 Cups water
[/ingredients][preperation] Add all ingredients to a large stock pot, cover with 8 Cups of water.

Bring mixture to a boil, cover and simmer for 8 min. Strain ingredients’ and set liquid aside.

Reserving all the lemon ingredients to use in the second batch.

Second Batch:  Take the lemon ingredients’ add 6 C water, and bring to boil.

Simmer for 20 min.

Strain and now discard all the ingredients. Save extra tea and refrigerate.

To drink: add raw sage honey to taste. I add about ¼ C  to the container. Keep tea on counter, heat as needed. Store leftovers in the refrigerator.
