What does healthy eating mean to you?
Healthy eating, to me, is being conscious of what we put in our bodies and maintaining a balanced diet. For me, eating organic, grass fed and non gmo foods is very important. I believe that the right foods can heal and nourish our bodies. Healthy food should be exciting! I love making healthy delicious dishes that people can remember and feel good about eating. My diet consists of fresh veggies and fruits, grass fed organic proteins, raw nuts, seeds, tons of healthy fats, superfoods, and a SOURCE CAFE green juice once a day.

Why do you think it is important for children to learn about healthy eating?
I believe that is very important for children to learn, at an early age, about healthy eating because this knowledge will set the tone for their teenage and adult years. We know that a multitude of health problems may be avoided if a child eats a healthy balanced diet. If healthier foods are introduced to a child at an early age, that child is much more likely to make positive food choices throughout her/his life. Instead of waiting until we are adults to eat healthy..let’s encourage kids to eat wholesome foods! Children are our future. Educating kids at a younger age about the benefits and healing properties of foods, as well as showing them what unhealthy foods can do to our bodies, has an enormous impact on our nation’s health now and in the future.

What can we do to urge children to choose healthy options?
I know this is a big challenge. I am not a mother, but I have an amazing nephew who is very picky! I try constantly to sneak healthy foods into his diet. Getting him involved in the preparation of fun (nutritious) treats encourages him to choose healthier snacks. Including kids in the making of a healthy treat, meal or fresh juice excites them and they are always eager to try their creations! I am constantly trying to develop healthy snacks for kids…adding pureed spinach into a meat sauce for spaghetti or hiding greens in a berry smoothie. It goes back to educating children about why it is important to make healthy food choices. Make it fun, turn it into a game (not a diet) and kids will respond!

What experiences in your childhood inspired you to cook and eat healthy foods?
Growing up in Atlanta, as a rebellious teen, I ate fast food/processed foods. At the time, I didn’t realize what the consequences of my poor eating choices would lead to as an adult. My inspiration today to eat a healthy and balanced diet is to help heal my body naturally. I am passionate about creating new dishes that deliver a feeling of being nourished while utilizing only the freshest, healthiest ingredients. At the SOURCE CAFE at the beach we call it..The Art of Nourishment.
